Soft dairy ice cream swirled with marshmallows and biscuit crumb, with chocolate sauce over the top. It's credited to McDonald's Canada, and it's built on the s'mores, the North American campfire sandwich of toasted marshmallow and chocolate pressed between two graham crackers. The three parts map straight across. The marshmallows stand in for the toasted one, the chocolate sauce for the square of chocolate, and the biscuit crumb for the graham cracker, which isn't sold in the UK and is close in flavour to a digestive. Unlike the Oreo, Smarties and Cornetto versions on the UK menu, it isn't built around a licensed brand, so the flavour comes from the dessert it's named after.
