The sauce leans into a barbecue-style profile, with the paprika and chilli doing most of the heavy lifting. On Nando’s PERi-ometer, churrasco sat at Hot, so it was one of the more fiery guest bastes rather than a mild herb-led option. Compared with the regular PERi-PERi sauces, it trades some of the sharp vinegar and lemon snap for a rounder smoked note, while keeping the chicken centre stage.
