Long, thin stems with small florets, grilled and lightly charred, are served as a simple side dish. Slender stalks and open heads mean it cooks quickly and takes on a bit of smoke without losing its snap. Here, Nando's treats it differently from its chips, corn, and rice sides by keeping the preparation spare: just the vegetable, heat, and charring. Flavour stays green and vegetal, with a slightly bitter edge from the grill marks that works well alongside PERi-PERi chicken. It's one of the lighter sides on the menu and brings some colour to an otherwise brown-and-golden plate. Seasoning is minimal, letting the natural taste of the vegetable come through, and the stems keep a pleasant crunch even after grilling.
