Eton Mess Sundae

What is it?

Soft vanilla ice cream is layered with strawberry sauce, strawberries, whipped cream and crushed meringue pieces, giving this sundae the familiar mix of fruit, dairy and sugar that defines Eton mess. Served in a clear cup, the layers stay visible, so you can see where the cream runs into the fruit and where the meringue sits above or sinks into the ice cream. Compared with Wimpy’s later Churro Whirl and Brownie Whirl sundaes, this one sticks closer to a traditional British dessert format. The meringue adds crunch at first, then softens as it meets the ice cream, which is part of how these layered desserts change as you eat them.
