Red Peppers with Romesco

What is it?

Roasted red peppers come stuffed with a romesco filling, usually made with nuts, roasted peppers, tomatoes and a little garlic, then finished as a frozen vegetarian meal. It’s built around the vegetables rather than pasta or rice, so the texture stays soft in the pepper and thicker where the sauce sits. Within Charlie Bigham’s frozen range, it sits closer to the vegetable-led side dishes and smaller mains than the creamier, sauce-heavy trays. Like other items in the line, it’s designed to be heated from frozen, with the peppers holding their shape while the romesco brings the flavour through.
