Cod Fishcakes

What is it?

Cod and mashed potato fishcakes come coated in a crisp breadcrumb, with flaked cod folded into the mash. Inside, the texture is soft and fairly smooth, while the outside is built to turn crunchy and golden in the oven or frying pan. The cod flavour is mild, so the potato and seasoning do much of the flavouring work, with the breadcrumb adding a toasted, wheaty note. Compared with other frozen fish items in the same range, these stay close to the classic British fishcake formula, using a simple cod-and-potato filling rather than sauce, vegetables, or added spice. They're a quick weeknight option that works well with chips, beans, or a salad on the side.
