

Atlantic lemon sole strips are coated in a crisp breadcrumb and sold as goujons in the frozen aisle. They’re a simple fish format: narrow pieces of sole, breaded on the outside, with the fillet inside kept in strips rather than whole portions. Cook from frozen in the oven or under the grill until the coating is crisp and the fish is hot through. Compared with other Waitrose fish fingers and breaded fish products, these use lemon sole rather than cod or haddock, so the cut and fish type are different, even though the preparation is similar.
