

White fish fillets come coated in a light tempura-style batter, then frozen for oven cooking. The fish is usually hake or cod, depending on the pack, and the batter sets up thin rather than heavy, so you get more fish and less shell. Young's Seafood uses this style across a few breaded and battered ranges, but here the coating is closer to a tempura shell than the thicker chip shop sort. Bake from frozen until the batter is crisp and the centre is hot.
