Salt is the useful ingredient in a dark chocolate bar, more so than in a milk one. It suppresses bitterness, and bitterness is exactly what a dark chocolate has more of, so a salted caramel here isn't only adding a flavour, it's doing something structural. Caramel pieces also solve the texture problem. Dark chocolate sets harder and snaps more sharply than milk, which makes for a fairly uniform bite, and something soft folded into it gives that somewhere to go.
