The Creme Egg centre is fondant split into two colours, white and yellow, to look like a yolk and a white. Fondant is sugar syrup crystallised into very fine crystals and then softened, which is what makes it flow the way it does at room temperature. It's the only centre in the range that behaves like that. Shrinking it changes the balance. A mini has a much higher ratio of shell to filling than a full-size egg, so it eats as chocolate with fondant in it rather than fondant in a chocolate shell.
