Biscoff is the caramelised, cinnamon-spiced biscuit that turns up with coffee across Belgium and the Netherlands, baked from a dough rich enough in brown sugar to colour in the oven without anything added to it. It works in a bar this sweet because it isn't only sweet itself. The cinnamon and the slight bitterness from the caramelised sugar give the milk chocolate something to push against, which a plain sweet biscuit wouldn't. The biscuit is also unusually dry and hard-baked, so the pieces hold their snap inside a filled bar for longer than a softer crumb would manage. At 350g this is the largest bar in the range.
