White chocolate has no cocoa solids in it, only cocoa butter, sugar and milk, so there's no bitterness to balance the biscuit underneath. That makes this the sweetest thing in the Fingers range by some distance. It also looks different in a way that matters commercially. A pale coating over a pale biscuit gives almost no contrast, so the product reads as one thing rather than two, where the milk chocolate version reads as biscuit plus coating. White chocolate is the fussier coating to work with as well, since it has no cocoa solids to mask scorching and burns at a lower temperature.
