A protein bar built to resemble the confectionery rather than a confectionery bar with protein added, which is a different exercise. The nougat is replaced with a protein-based layer, and that layer behaves nothing like the original. Protein is the difficulty. Whey and soy proteins absorb moisture and firm up over time, so a bar that's soft when it's made goes hard on a shelf unless the formulation accounts for it, which is why protein bars are so often denser and chewier than what they're imitating. Peanut butter is a sensible flavour to build one around, since it's already about half fat and carries enough of its own texture to cover for what the protein does.
