Pecan is the softest of the three nuts the bar has been built around. It carries more oil than an almond and far less bite than a peanut, so it adds richness where the others add crunch. That makes for a rounder bar with less contrast in it. The nougat and caramel are already soft, and a soft nut doesn't interrupt them the way the original does. Pecan is also the sweetest of the three, with none of the bitterness a walnut brings, which is why it turns up in American confectionery far more often than it does in British.
