This is the variation that changes the most. Replacing the caramel with a creme layer removes the pull that defines a Twix, so the bar snaps all the way through instead of stretching. The biscuit is dark here rather than pale shortbread, which puts some cocoa bitterness under a coating that has none of its own. Creme is also a much easier filling to work with than caramel. It's mostly fat and sugar with very little water in it, so it doesn't migrate into the biscuit and soften it the way a wetter filling would. That makes it the more shelf-stable of the two constructions, even though it's the one further from what a Twix is supposed to be.
