A snickerdoodle is an American biscuit rolled in cinnamon sugar before baking, and cream of tartar is what makes it one: it keeps the sugar from crystallising and gives the biscuit its characteristic tang and chew. Putting it under caramel is a sensible swap for this format, because cinnamon is one of the few spices that holds up against a sweet coating without being buried by it.
