Crunchie's honeycomb is difficult to move into ice cream, because honeycomb goes soft the moment it meets moisture. The answer here is to put the honeycomb flavour in the ice cream and the actual honeycomb pieces in the chocolate shell, where they stay dry and keep their snap. The centre is honeycomb flavoured rather than vanilla, sweet and slightly caramelised in the way Crunchie's own centre is. Over it goes Dairy Milk milk chocolate with the honeycomb bits suspended in it, so the crunch happens on the first bite rather than partway through.
