Hokey pokey is New Zealand's name for honeycomb toffee, and the ice cream built on it is close to a national dessert there. It crosses the Tasman without changing much. The honeycomb arrives in pieces ranging from fine shards to larger chunks, and that range matters more than it sounds. Honeycomb starts crisp and dissolves fairly quickly once it meets moisture, so a mix of sizes means some pieces still crunch while others have already softened. The vanilla base stays deliberately plain. With no sauce or swirl anywhere in the tub, the honeycomb is the only thing happening in it, which is how the flavour is meant to work.
