This is the gelato stick in Connoisseur's Italian-leaning range, and it puts the crunch on the outside rather than through the middle. Biscotti crumb is folded into the gelato, then the whole stick is coated in milk chocolate with slivered roasted almonds pressed into it. Biscotti is twice-baked, which is what makes it hard enough to survive being folded through a frozen base without going soft. The crumb keeps some bite where a softer biscuit would simply dissolve into the gelato around it. Almonds make up 3.5% and they're slivered rather than diced, so they lie flat against the shell instead of standing proud of it. The wheat flour and malt extract in the ingredient list are the biscotti itself rather than an added flavouring, which is worth noting given how often biscuit notes in frozen desserts are flavour compounds and nothing more.
