Rocky road is defined by having three textures at once, so translating it into ice cream means every one of them has to survive freezing. Marshmallow is the difficult one. It stays chewy at freezer temperature where most soft confectionery sets hard, which is the reason it appears in rocky road ice cream at all. The nuts stay crunchy and the chocolate pieces sit firmer than the base around them, so a single scoop can hit three different resistances. The base is chocolate rather than vanilla, so cocoa runs through both the ice cream and the pieces in it. Sold as a 1 litre tub, it contains tree nuts and lists no artificial colours or flavours.
