An affogato is espresso poured over ice cream, and its appeal is the temperature contrast, hot coffee melting cold dairy. A frozen version can't do that, so it has to work on flavour instead. The answer here is concentration. Coffee runs through the base at a low level, then an espresso sauce ripple carries it much stronger, so the intensity shifts depending on where a spoon lands rather than staying flat across the tub. Cookie crumbs supply the texture, staying small and biscuit-like rather than arriving as chunks. Cremissimo is Streets' smoother, denser tub line, which suits a flavour built around a sauce running through it.
