A lamington is sponge cake dipped in chocolate and rolled in desiccated coconut, often with jam through the middle, and the Gaytime format maps onto it almost exactly. The swap is in the coating. Chocolate sponge pieces and coconut replace the usual biscuit crumb, and the ice cream inside carries a raspberry jam note instead of the standard toffee. That moves it a long way from the original. Where a classic Gaytime is butterscotch and biscuit, this is fruit and coconut, using the same bar and the same rolled-crumb construction to arrive somewhere quite different. Coconut carries most of that distance, since nothing else in the range uses it.
