The bar Weis is known for, and the simplest expression of what the brand does: fruit set as one layer against ice cream as the other, with no coating over either of them. Keeping them separate is the point. A mango ripple through ice cream gives an average of the two in every bite, where two distinct layers let each be tasted alone or together depending on the angle of the bite. The fruit layer is icier and sharper, the cream layer denser and milder. Weis began in Toowoomba in Queensland, and mango has been its signature flavour throughout. The absence of a coating is part of the design rather than an omission, since a chocolate shell would seal the fruit layer away from the first bite.
