BBQ sauce replaces the usual tomato pizza base here, with chicken pieces and rasher bacon, mozzarella and onion on top. Sweeter, smokier base shifts the flavour in a different direction from the standard range, and the onion adds a bit of sharpness while the cheese ties everything together. Topping mix is straightforward, with no extra vegetables or heat, so the main change is in the sauce and how it alters the whole pie. BBQ base gives it a caramelised sweetness that tomato sauce can't replicate, and the bacon pushes that smoky note even further.
