Four fillets is the entire idea. The Bondi Burger has always come as a single, double or triple, and this takes the same build one rung further: four flame-grilled chicken breast fillets, cheese, mayonnaise, lettuce and Oporto's Original Chilli Sauce in the usual bun. Stacking chicken that high changes the balance rather than just the size. One measure of chilli sauce and mayo now has four layers of grilled breast to cover instead of one, so it runs leaner and smokier than the single, and the char off the grill carries further than the sauce does. Oporto put it out for Father's Day weekend, from 4 to 6 September 2026, in the year the Bondi Burger turned 40. The recipe traces back to the first Oporto in North Bondi in 1986, and every version on the menu still runs on the same chilli sauce.
