A supreme built on chicken instead of cured meat, which shifts the balance more than swapping one protein for another usually does. Chicken is mild and lean where pepperoni and sausage are salty and fatty, so the vegetables have room to be tasted rather than sitting in the background. Mushrooms, juicy pineapple, roasted red capsicum, green capsicum and onion all register here in a way they don't on the Super Supreme. Roasted red capsicum is the ingredient worth noticing. Roasting concentrates its sugars and softens the flesh, giving a sweeter, smokier note than the raw green capsicum sitting beside it on the same pizza.
