A lava cake is deliberately underbaked in the middle, so the outside sets to a sponge while the centre stays liquid. It's a timing trick rather than a filling, though most chain versions build the centre in to make it reliable at volume. The icing sugar dusting is the only decoration, and it does something practical as well, since it sits on a dark surface and makes the cake read as a dessert rather than a plain chocolate round. It's the smallest of the hot desserts and the only single serve among them, where the cookies and the brownie are all sized to share and cut into slices.
