Whipped cream or egg white is folded through melted chocolate, and the air suspended in it is what keeps the texture light despite the fat and sugar involved. That's why a mousse eats so differently to a lava cake built from broadly similar ingredients. It's a single serve rather than something to share, which makes it the smallest thing on the dessert menu and the only one needing no oven time at all. That also makes it the one dessert that arrives at the same temperature it was made at.
