The pizza that still generates an argument, and one Australians order more of than almost anyone else. Smoky honey ham, juicy pineapple and mozzarella, with nothing else on it. The case for it rests on the pineapple's acidity rather than its sweetness. Ham is salty and fatty, and fruit acid cuts through that in the same way it does in a glazed ham, which is a pairing nobody argues about at Christmas. Pineapple does release water as it heats, which is the practical objection to it. The Original Pan base copes with that better than a thin crust would, since there's more dough to absorb it before the middle softens.
