Chocolate three ways in the same tray: Hershey's cocoa in the batter, Special Dark chocolate through it, and semi-sweet chocolate chips on top of that. Using three forms rather than more of any one is what gives a brownie depth. Cocoa powder brings the dry, bitter edge, dark chocolate brings fat and a smoother body, and the semi-sweet chips stay as distinct pieces rather than dissolving into the crumb around them. It's cut into nine slices where the cookies get eight, which suits a denser bake. Served warm, when a brownie is at its softest and before the chocolate in it sets back up.
