Corn is what makes these different from a standard jalapeno popper. Alongside the spicy jalapeno and the cheese there's juicy corn through the filling, bringing sweetness and a soft pop against the heat. Crumbing rather than battering is the other distinction. A crumb coating stays crisp for longer once fried and gives a rougher surface than batter does, which matters for something served alongside dips. The cheese inside is the part that has to be right. It needs to melt to a proper ooze without escaping the crumb, which is why these are formed as sealed bites rather than as stuffed peppers. Sold in a six bite serve.
