Two ingredients above the sauce, and the menu describes it as plainly as it eats: lots of pepperoni and mozzarella. Pepperoni is the most ordered pizza topping almost everywhere, and it earns that by what it does in the oven rather than by flavour alone. The fat renders and pools in the cup of each slice, crisping the edges and basting the cheese underneath, which is why a pepperoni pizza tastes of more than its two parts. With nothing else competing, this gives the clearest read available on the base and the cheese. The Original Pan crust cooks in its own pan, so the outer edge comes out crisp while the centre stays soft.
