Zambrero's Fat Taco leans on a thicker, fluffier soft tortilla than a standard taco shell, built to hold a bigger load without falling apart. It takes a choice of protein, then pickled red onion, sour cream and sauce. The chain calls it the thickest taco it has made since opening in 2005, and designed it to be eaten one-handed. It launched nationally from around five dollars and sold well enough in its first weeks to stick around.
