Four cheeses on a thin and crispy base: mozzarella, Edam, Emmental and blue, over the signature passata. The blue cheese is what makes this work. Mozzarella, Edam and Emmental are all mild and would produce a rich but flat pizza on their own. Blue cheese is sharp and salty enough to cut through the other three, and it's used sparingly enough not to dominate. Emmental brings a nuttiness that Edam alone doesn't, and it melts more readily. Between the four, the pizza covers most of what cheese can do, which is the point of a quattro formaggi rather than a plain mozzarella.
