Spinaci

What is it?

Spinach over mozzarella and Edam on passata, and the quietest pizza in the range. There's no meat, no chilli and no strong cheese, so it leans entirely on the spinach and the base. Spinach loses most of its volume in the oven, so it's spread thinly across the whole pizza rather than heaped. What's left is more about texture and colour than flavour, which is why the Edam matters: it supplies the savoury weight the spinach doesn't. It's the vegetarian option for anyone who finds the Quattro Formaggi too rich and the Mozzarella too plain, and it sits between the two in the line-up.
