A 340g vegan pizza using cherry tomatoes, semi-dried marinated tomatoes, dollops of pesto and a vegan mozzarella style topping on passata. Two kinds of tomato is the sensible move on a vegan pizza. Dairy mozzarella supplies fat and salt that plant-based versions struggle to match, so leaning on semi-dried tomatoes, which are concentrated and savoury, covers some of that gap. The fresh cherry tomatoes then bring back the acidity the semi-dried ones lose. The pesto does similar work, adding oil and herb where cheese would normally carry it. It's the same approach as the standard Mozzarella pizza in this range, adapted for a topping that can't rely on dairy.
