Cheese and onion works because neither half is strong enough on its own. Cheese powder on a chip reads as salty and slightly sour, and the onion supplies the sweetness and depth sitting behind it. The balance between the two is what separates versions of this flavour. Push the onion and it turns sharp, push the cheese and it goes flat, and there isn't much room either side of the middle. On a thinner chip the seasoning spreads more evenly across the surface, which suits a two-part flavour where an uneven coating would deliver one note or the other rather than both.
