The cherry version of the cola bottle lolly, using the same mould and a different flavour. Cherry cola has been sold as a variant since long before it reached the freezer, and the pairing works because cola is already built on a blend that includes citrus and spice. Cherry slots in as another fruit note rather than sitting on top of something plain. Frozen, cherry behaves better than most stone fruit. Its flavour is carried by compounds that survive cold, which is why cherry remains recognisable in an ice lolly where a peach or an apricot would fade into generic sweetness.
