Coconut and mango is the tropical pairing that turns up wherever the two grow, and it holds together because they solve each other's problems. Coconut brings fat and body but very little acidity, so on its own it reads heavy and slightly flat. Mango brings acid and aroma but not much substance. Put together, the coconut carries the mango's flavour and the mango stops the coconut becoming cloying. Both freeze well, which isn't true of most tropical fruit. Coconut is largely fat and mango is thick with pulp, so neither throws the ice crystals that a thinner fruit would. The coating is pale and flecked with coconut, so there is no cocoa anywhere in the bar to cut the sweetness.
