What is it?

Clotted cream is what separates a Cornish ice cream from a plain vanilla one. It's cream baked slowly until the fat rises and thickens, and folding it into an ice cream base pushes the fat content well above a standard soft scoop. That has a practical effect as well as a flavour one. Fat slows melting and carries flavour for longer, so a clotted cream ice cream holds its shape in the bowl and finishes with a distinct dairy richness rather than tailing off sweet. Cornish clotted cream itself holds a protected designation of origin, granted in 1998, which requires the milk to come from Cornwall and sets a minimum butterfat. Cornish ice cream carries no such protection, so the name on a tub describes the recipe rather than a guarantee. This one arrives as a soft scoop tub rather than a hard-set block.
