Passion fruit added to the mango sorbet mochi, and it's there for acidity rather than for the fruit itself. Mango on its own is sweet with very little sharpness, which is fine in a tub where a spoonful is small but flattens quickly inside a soft dough that's also mildly sweet. Passion fruit is sharply acidic, and a small proportion of it lifts the whole piece. The two are paired constantly for this reason, in juices as much as desserts. Neither quite works alone at this sugar level, and together they cover the full range from sweet to sharp. Six to a pack, and the wrapper stays deliberately plain so it does not interfere with either.
