Pineapple in the Fruit Sticks range, and the fruit that behaves most unusually in frozen desserts. Fresh pineapple contains bromelain, an enzyme that breaks down protein, which is why it can't be set in a gelatine jelly and why it curdles fresh dairy. In a water ice with no dairy and no gelatine that isn't a problem, and heat treatment during processing deactivates it in any case. What is left is a sharp fruit, with acidity high enough to stay bright once frozen. Twelve to a pack. It sits at the sharper end of the three Fruit Sticks flavours, which between them run from the mild forest fruits through mango to this.
