A dairy-free raspberry sorbet centre wrapped in soft rice dough, sharp against a neutral wrapper. Raspberry is the berry that loses least to freezing. Its acidity and colour both survive intact, where a strawberry fades on both counts, which is why raspberry turns up in frozen desserts far more often than its share of fresh fruit sales would suggest. Without dairy there's nothing to round it off, so the contrast between the neutral dough and the fruit inside is starker here than in any of the ice cream versions.
