Soft scoop is a British category rather than a description. It means an ice cream built to stay yielding at freezer temperature, using more air and a softer fat blend than a dairy ice cream that sets hard. The trade is deliberate. A soft scoop gives way under the spoon straight from the freezer, which is the entire point of the format, and it loses some of the density a slower-melting recipe would have. It arrives in a rectangular tub rather than the round pots the flavoured Gianni's lines use, which is the traditional shape for this part of the freezer. Vanilla is the only flavour the format really needs.
