Gianni's Tropical Mochi Ice Cream

What is it?

Tropical is doing a lot of work as a flavour name, standing in for a blend rather than a single fruit, which is common wherever mango, passion fruit and pineapple appear together. The blend suits mochi better than any one of them would alone. Passion fruit is too sharp and too seedy on its own, pineapple carries an enzyme that breaks down dairy protein, and mango has body but little acid. Combined, each covers what the others lack. The dough stays deliberately plain. Mochi is a texture rather than a flavour, and anything more than faintly sweet in the wrapper would interfere with what it's holding.
