Cherry and chocolate is a pairing borrowed from Central European baking, where the two have been put together in tortes and gateaux for a great deal longer than in confectionery. It works for the same reason raspberry does on a chocolate bar. Cherry brings acid and a slightly almond-like note from the stone fruit family, and both cut through a fat-heavy coating in a way that a sweeter fruit wouldn't. Pairing it with vanilla rather than using cherry alone keeps the centre from becoming one sharp note. The vanilla sits underneath as the neutral half, which is the same role it plays across the rest of the Gianni's stick range.
