The only tropical flavour in the Specially Selected ice cream range, and one of the few fruit ice creams that doesn't turn icy. Mango is the reason. Its pulp is thick and starchy rather than watery, so it suspends in a dairy base without throwing crystals, where a strawberry or a melon would. Passion fruit supplies the acidity that mango lacks, which stops the tub reading as flatly sweet. The pairing is close to universal in juices and desserts for that reason: neither fruit quite works alone at this sugar level, and between them they cover sweet through to sharp.
