Pistachio is a widely imitated flavour. The nut is expensive, its natural colour is a dull olive rather than the bright green people expect, and its flavour is delicate enough that almond is routinely substituted for it. Roasting is what makes the difference in a real one. It drives off moisture and concentrates the oils, which is where the flavour lives, and it gives the toasted edge that a raw nut lacks entirely.
