What is it?

Valencia is a juicing orange rather than an eating one. It has thin skin, few seeds and a high juice content with more acid than a navel, which is why it is one of the main juicing varieties worldwide. That acidity is what makes it suit a lolly. Freezing dulls sweetness and aroma far more than it dulls sourness, so a variety chosen for sharpness still tastes of orange once frozen where a sweeter one would fade.
