Eton mess is strawberries, cream and broken meringue, and the name comes from Eton College, where it has long been associated with the school's cricket match against Harrow. This is an assembled version rather than a bowl of it. A baked meringue base carries a cream cheese mousse, finished with white chocolate sauce and strawberry sauce, which holds a shape the traditional mess never does. That makes it a dessert to cut rather than to spoon out. Meringue is the part that makes it work and the part that makes it difficult.
